When I was lucky enough to have my own Avocado Trees in Santa Barbara I made guacamole nearly every day. It is the “good fat” I told myself.

The owner shared this version of guacamole when I brought him my basket of avocados and limes. There is a similar recipe in Bon Appetit.

Guacamole

For 1 cup – 1 person ( or two unless I am sharing)
Ingredients:

1 large, ripe avocado, pitted and peeled
1/2 cup each of fresh cilantro and onion, both chopped
2 large garlic cloves, finely chopped
2 Serrano chilies, chopped and seeded
Salt and pepper
2 squeezes of fresh lime juice

Directions:

  • The Superica cooks mash the avocados and lime in a bowl.
  • Then add the rest of the ingredients.
  • Mix to a rough chop.
  • Serve with freshly made or toasted, crisp Tortilla chips

Tip: Serrano chilies are small, green and hot! Use with care. If chopping onions makes you cry do not touch your eyes with your hands.
