This is probably the last cookie posting for this year. This is another one I liked, but not as much as everyone else. For others, it was a favorite. If you make this, I’d love to have your feedback.

Maralyn & Carol’s Italian ChewsIngredients:

3/4 Cup soft butter
2 Tbsp Granulated sugar
1-2/3 Cup sifted four
3 Egg yolks
2-1/4 Cups light brown sugar packed
1 Cup chopped walnuts
3/4 Cup flaked coconut
3 Egg whites beaten stiff
Confectionary sugar

Directions:

Preheat oven to 375 degrees.
Cream butter and add white sugar and beat until light.
Add flour and mix well.
Pat into 13 x 9 x 2″ pan and bake in 375 oven for 15 minutes.
Beat egg yolks and then gradually beat in brown sugar.
Add nuts and coconut.
Fold in egg whites.
Spread on baked mixture.
Bake 25-30 minutes longer.
Cut into 54 squares and dust with confectionary sugar.
Store in airtight container.
