I received an invitation on St. Patrick’s Day to go to Ireland in May. How tempting. My mouth is watering and my heart is hungry for those old wooden door bars I discovered in the country part of County Cork.

Since Old Bushmills distillery is the oldest operating distillery in the world (1608), I will make a simple toast.

Pour a dram or more of Bushmills in a glass and sip slowly. CHEERS.

Variations are to add ice, water or club soda, but the bartenders I met pour it neat.
