Simple Spinach Salad

Ingredients:

1-2 bunches spinach, washed thoroughly – we prefer baby spinach leaves
10-20 mushrooms of choice, cleaned and sliced
2-3 large leeks, cleaned and trimmed
This is all you need for the basic salad

Directions:

Combine the ingredients with your favorite salad dressing.

I like homemade or bottled Italian, creamy blue cheese or ranch.

Optional Ideas:
1-2 bunhes of scallions, (green onions) cleaned and chopped with the green and white parts. Sometimes I add a purple Bermuda onion sliced for color and mild flavor.
Crispy bacon bits on top are an added zip, especially with blue cheese dressing.
Maralyn likes feta or goat cheese, I like blue cheese chunks.
