While visiting Woodstock, VT on an International Food, Wine & Travel Association Media Trip, we were fortunate to meet Chef/Owner Teresa Tan and Manager/Owner Amy Martsolf of Mangowood Restaurant at The Lincoln Inn.

Amy prepared Teresa’s Lychee Ginger Ice Wine Martini for us. This drink was absolutely delicious. When our group went there two days later, they agreed.

Lychee Ginger Ice Wine Martini
Ingredients:
Pure and strain:
1 can lychee in syrup (less 4 lycheee fruit)
juice and zest of 1 large lime
1 inch of ginger, grated
vodka
ice wine

Directions:
Chill your glasses.
Combine and shake well in ice:
1 part vodka
1 part ice wine
1 part lychee puree

Add 1 frozen lychee for garnish and chill.

Enjoy.

Teresa went on to prepare a Leek(or Wild Ramps) & Mushroom Goat Cheese Brulee which will be featured on our June 12 post.

Dining at the Mangowood is an experience to remember. The food is a fusion of local ingredients with Asian ingredients and the results are delectable. It is located inside The Lincoln Inn. Like most inns, The Lincoln Inn at the Covered Bridge reflects its owners. Teresa and Amy refer to it as “The classic Vermont experience with a twist…”
