The Hill team spent a delightful morning in the calm waters of Rockland Harbor. What a thrill to be pulling. up traps with a master.





Captain Steve, owner of Captain Jack’s (named for his grandson) taught us the tricks of the trade. We learned how to hold the lobsters safely, what their colors mean, which ones are keepers, hard versus soft shell and how to spot a male from a female.

Steve shared favorite cooking methods and his recipe for baked stuffed.

Baked Stuffed Lobster

Split the lobster down the middle with a sharp knife.
Add fresh mussels, clams and shrimp or scallops on top, drizzle butter over Ritz cracker crumbs and bake until done-lobster will turn bright red.
The delectable lobster meat will turn from translucent to white.

Captain Steve knows every boat captain and buoy in the harbor by name. He knows how to find the ship wrecks and where the lobsters hide under the rocks by the lighthouse.

After our Lobster lessons from Captain Steve ( Under 1/12 pounders are the most tender), we got a lesson in choosing the freshest fish to cook.
  1. No fishy odor.
  2. Bright red gills and clear eyes.
  3. Taught skin and body.

This learning experience was a highlight of our trip to mid coast Maine while we were visiting and enjoying the Historic Inns of Rockland.

They co-authored "Our Love Affairs with Food & Travel" and joined French Master Chef Herve Laurent in writing "Cooking Secrets: The Why and How" Brenda has been active in the California Writer's Club, IFWTWA, and the Santa Barbara's Writers Conference. Brenda Hill and her partner Maralyn Hill conduct marketing and writing seminars. Maralyn and I will be heading back to Rancho La Puerta in July to give our presentation on writing and marketing your book, as well as bringing back some freshly picked off the farm nutritious and tasty recipes.
