Maralyn has a fool proof recipe for preparing a perfect salmon every time. I found an alternative marinade by trial, using what I had on hand at home.

Pacific Northwest Sock Eye salmon is flown in fresh to certain markets in Florida for only a few weeks. This marinade married well with the Sock Eye, or any fillet of salmon. I used about a pound of salmon – a thick fillet.

Marinade for salmon :

1/4 cup smoked almonds -crushed
1/4 cup maple syrup (could substitute honey, but the maple flavor is better)
1/8 cup soy sauce, light is fine, or use less
about 2 teaspoons or to taste, of garlic pepper and chili powder, and paprika.

Directions:

I simply mixed it all together in a baggie, and marinaded the salmon for about an hour.
I baked the salmon for about l0 minutes at 400 degrees in a Pyrex type dish with the marinade, not turning it.
Time varies, but we like our fish moist and flaky, slightly underdone.

This dish went well with spinach, and potatoes – to soak up the juices. I served it with a simple California white wine, but this fish is strong enough for a light red. Cold beer is good too.
