When the Hill Team visited Rockland, Maine, this year, we had the pleasure of staying at the Captain Lindsey House Inn. The hospitality was exceptional and the food absolutely fantastic. Owners, Captains Ellen & Ken Barnes, and innkeeper, Patricia, make sure guests are welcomed and comfortable at all times. We will have a full story on the Captain Lindsey House soon. In the meantime, here is a recipe for its Window Box Egg Casserole. The next post will have the flourless
chocolate cake. Patricia picks herbs and tomatoes from the window box in the kitchen. We are enclosing a video link in case the video does not show below. I’ve redone the video several time and get the same glitch–so, audio it is.

CAPTAIN LINDSEY HOUSE INN’s

WINDOW BOX EGG CASSEROLE

(Taking the “kitchen garden” to new heights)

Ingredients:
1/2 stick butter
16 ounces fresh or frozen hash brown potatoes
1 pound ground sausage
1 dozen eggs
2 cups milk
salt & pepper
parsley, thyme, chives, kale, chopped
tomato or some baby tomatoes about 1/2 to 3/4 cup chopped
1 red pepper, seeded and chopped
2 cups shredded cheese (a mixture of cheddar, Swiss and mozzarella nice flavor)
Directions:

While oven is preheating to 450 degrees, put in 9×13 inch casserole with ½ stick of butter in bottom.

When this is melted, stir in 16 ounces fresh or frozen hash brown potatoes.

Return casserole to oven and bake about 20 minutes until potatoes are crunchy.

Meanwhile:

Brown ground sausage.

Mix 12 eggs with 2 cups milk, salt, pepper.

Clip from the window boxes: parsley, thyme, chives, kale.

Wash, dry, cut up and add to egg mixture.

Harvest tomatoes and red peppers from the window boxes.

Wash, dry and chop.

Remove casserole from oven & turn oven down to 350 degrees.

Layer sausage over hash brown potatoes, then peppers and tomatoes, then the egg mixture.

Cover top with shredded cheese of your choice. (I like to use a mixture.)

Bake for one hour.

Let set 10-15 minutes before cutting.
