This tasty spinach side dish pairs well with fish and meat. It is healthful and easy to make in the microwave.
Spinach and Rice
Ingredients
l bag of fresh spinach, about 9 -10 oz.
1 tbs butter
2 bags frozen precooked rice, wild or brown
2 tbs or more, of shredded Parmesan cheese
Method
Place spinach and butter in a microwave bowl.
Cover and microwave about 3 minutes or until spinach starts to wilt.
Stir in rice and microwave for 4 more minutes.
Let stand for about 2 minutes, fluff with a fork, sprinkle with cheese and serve.
We served this spinach dish with baked salmon for great eye appeal.
