The Hill team is very thankful. We happened upon Horse-Eye Jack’s by chance. We were lost. We were frustrated… no map, no phone, no more cash and no clue where were were.

We were late for where we thought we were going – to a full moon beach party.

Then an angel named Arlene reminded us…” You are on island time, relax, I will make you a special drink and call you a taxi.” At first sip we didn’t want the taxi. We all loved the house special rum punch lovingly prepared by Arlene at the Horse-Eye Jack’s on Thanksgiving eve.

Somehow she turned pineapple juice, local and Myers rum, plus some other fruits into our favorite drink in the Turks and Caicos. So good, we returned the next day after our lunch at da Conch Shack next door.

As it turns out we were not late for the Full Moon Party at the Sibonne Beach where Bay Bistro & Kissing Fish Catering are located. This is the beauty of “island time.” Arlenes kindness and delicious concoction turned our evening of frustration into a festive celebration.

By the way, the reason the taxi took us to the wrong location is Horse-Eye Jack’s is known for their monthly Full Moon Beach Party which was scheduled for the next night. In any case,  all
