Oak Island Aerial View

When we visited Nova Scotia, there was so much to see and we barely scratched the surface, exploring the southwest region. Atlantica Hotel & Marina is on Oak Island, about a hour from Halifax. Sitting on Mahone Bay, the view is always special. They were nice enough to share a recipe. We would love to spend a few days there and experience its spa.

Atlantica Parmesan & Asiago Crab Dip
Here is a recipe to whip up when entertaining friends and family or just to enjoy a tasty snack:

Ingredients:

(makes 12-14 ramekins)
– 1 can (16oz.) diced crab meat
– 16 oz. cream cheese
– 1 cup mayonnaise

– 1.5 cups parmesan
– 1.5 cups asiago cheese
– 1 cup sour cream
– 2 head of roasted garlic

– 2 full handfulls of cooked spinach in water

  1. In a mixing bowl put cream cheese, sour cream and mayonnaise together – whisk until smooth
  2. Add parmesan cheese and whisk well
  3. Season and chop the wilted spinach – add to mixture
  4. Make a paste out of the roasted garlic with a Chef’s knife – add to the mixing bowl – combine well
  5. Place the mixture into ramekins and sprinkle with asiago cheese
  6. Bake in oven at 400 degrees until golden brown and hot throughout
    *if you refrigerate the dip before use, microwave for 1 minute and then finish baking in the oven.
