Since Summer Jo’s pickle recipe was so well received, I decided to pass the Roasted Cauliflower along. This is easy and delicious.

Roasted Cauliflower

Spiced, Spicy, & Sweet

This dish is spiced, spicy and sweet. The sweet peppers create a subtle and delicious contrast to the spicy cauliflower. Well spiced with cumin, coriander, and cilantro, this dish is packed with punchy flavors. Enjoy on any cool evening to bring some warmth to the night.

Ingredients:

3 Tablespoons freshly squeezed lemon juice
3 Tablespoons Extra Virgin Olive Oil
1 1/2 teaspoons coarse sea salt
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon cumin seeds
1/2 teaspoon hot red pepper flakes
1 cauliflower cored and separated into florets
1 large red bell pepper, halved, seeded, and sliced into 1-inch-wide strips
1 large yellow bell pepper, halved, seeded, and sliced into 1-inch wide strips
1/2 cup fresh cilantro leaves


Method:

Preheat oven to 450 degrees.
In a large bowl, combine lemon juice, oil, ground cumin, ground coriander, salt, coriander seeds, and red pepper flakes. Whisk to combine.
Add the cauliflower and bell peppers and toss well.
Spread the vegetables in a baking dish and roast for 45 minutes.
Stir every 15 minutes for even browning. Transfer to serving dish, garnish with fresh cilantro leaves, and serve for the enjoyment of all!
