In looking for spas, we discovered the Ixtapan Spa Hotel and Golf Resort. This 60 year old destination spa is located in a small mountain village in the Sierra Madres Mountains. Even though they describe themselves as low key and a more budget minded spa, they are in demand. They offer the walks, exercise classes and spa treatments for amazing prices. Their demographics are the age 45+ budget spa goer. Their spa cuisine has been described as fantastic, as are the organic spa services.

Ixtapan Spa Hotel Chicken Tacos

Ingredients:

2 boneless skinless chicken breasts poached and cooled

3.5 oz tomato sliced

7 oz tomato chopped

3.5 oz onion sliced

3.5 oz onion chopped

4 tbsp coriander

3 oz romaine lettuce shredded

4 oz Monterey jack cheese

12 flour tortillas

1 can ranchero baked beans

1 tsp olive oil

 

Method:

Heat chicken in small amount of oil and sauté with chopped tomato and onion.

Remove from heat.

Season with salt and pepper.

Heat beans and mash until puréed.

Heat tortillas by placing them in a dry skillet over medium high heat one by one, turning once until crisp and golden on both sides.

Brush each tortilla with warmed beans, coat with shredded chicken mixture, top with shredded lettuce, arrange tomato and onion slices on top and decorate. Sprinkle with cheese and decorate with coriander.

Serve cold. It is very filling but low in calories.

Optional: Drop some jalapeno chili chopped onto taco for a hotter version.
