Guests of the AAA Five Diamond Grand Velas Riviera Maya need not fear the Kraken sea monster in the azure Caribbean water just off the resort’s white sand beach nor a hangover post- New Year’s Eve fun. The “Beyond All Inclusive, Beyond All Compare” Mexico resort hosts a New Year’s Day brunch ceviche bar in its Ambassador Pool area for travelers to get over those recovery blues. In case one can’t make it to Mexico this holiday season, they can make the following recipe at home.
