Pomegranate Mohitos

Each year our team fearures at least one special cocktail for parties or intimate get togethers. We enjoy a few mini appitizers and drinks that are robust in flavor and color. This crimson and fuchsia colored cocktail is simple and sumptious. Since it is not easy to have only one, we add a bit of extra club soda, like in a spritzer, to keep these cocktails light and bubbly. This holiday recipe is from the winter issue of Coastal Living Magazine. My chef trained daughter, who has cooked in the Coastal Living Test Kitchen, assured me that everything in that kitchen is state of the art perfection.

.

We often add our own twists to recipes, but not this one. Pomegranates are at their peak in wintertime.
