Summer Jo’s Hummus

I frequently feature Summer Jo’s, as I was quit impressed with the small establishment featuring excellently prepared and delicious healthy food. I hope you enjoy their hummus. Check out their website, as they always have a lot going on.

 

Summer Jo’s, Where Goodness Grows. Open for Breakfast and Lunch and Dinner, Thursday through Sunday, 10AM to 2PM and 5PM to 8:30PM.

 

Ingredients:

31 ounces of cooked white beans
2 heads roasted garlic
1/2 cup fresh mint
2 tablespoons lemon juice
2 teaspoons ground cumin, toasted
2 tablespoons Extra Virgin Olive Oil
Salt and pepper to taste
Optional garnishes: fresh cilantro, mint, lemon

Method:

Blend in blender.

Add more olive oil to
make it the consistency
you desire.

Garnish with cilantro or mint,
lemon wedge, paprika.

Voila!
