I do not know many people who do not like French fries, especially the thin, crispy ones. Of course we prefer them hot and fresh. However our cheese loving culinary team finds these simple to make at home when we have the urge to splurge. Who can resist bacon, cheese and fries?
This recipe is in honor the November IFWTWA adventure in Mexico’s Copper Canyon.
French fries with a Mexican twist
Ingredients:
One pound of frozen French fries
3/4 cups Mexican-blend cheese
a few tablespoons of cooked bacon peices – to taste
Method
Preheat oven to 450.
Cover a baking sheet with aluminum foil.
Bake frozen fries l5-20 minutes until golden.
Lift corners and edges of foil to gather cooked fries in the center.
Sprinkle with cheese and bacon and bake for another 1-2 minutes until cheese melts.
Our tips:
We had a few chives and shredded them into the cheese and bacon at the end.

Watch the cheesy fries carefully during the last 1-2 minutes.
