Generally when I write about Judith Galino, it is about her delicious toffee and candy from Homemade Confections in Medford, Oregon. However, Judith is a great cook and always willing to share. Here is her recipe for:

French Onion Soup

2 1/2 Tbs extra virgin olive oil
2 Tbs. minced or finely chopped garlic
1 Tbs. salt (gray or coarse salt if you have it)
9 cups thinly sliced white onions
1 – 2 Tbs. finely chopped fresh sage (dried may be substituted)
1/4 to 1/3 C. (use your palate to determine amount) premium balsamic vinegar
4 1/2 C. chicken stock
1 C. dried panzanella or foccacia croutons
1/4 pound Fontina or Havarti cheese

Method:

Heat olive oil in an over-sized skillet over medium high heat. Add garlic and cook briefly to release its fragrance

Add onions and a small amount of salt to help the onions release their liquid. Cook briskly, stirring continuously for about 8 minutes

Reduce the heat to low and cook, stirring occasionally, until the onions are transparent and golden brown (approx. 30 mins.)

Add the sage and vinegar until the vinegar evaporates

Add the stock and simmer for 10-15 minutes, then bring to a boil

Preheat your broiler and transfer to individual oven proof ramekins or serving bowl

Top with croutons and cheese

Broil until cheese melts

Serve immediately
