On of the joys of spring in New England is a hot breakfast on a chilly morning. Cranberry pancakes with plenty of hot coffee tasted better in the zesty weather.

Just add fresh whole cranberries, or blueberries, (or both) to your favorite pancake recipe.

Then try this syrup of both maple and honey.

1 cup maple syrup
1/2 cup honey

Cook syrup and honey for 6-8 minutes on medium heat. Serve warm over pancakes or French toast.
