Caribbean Guacamole

Avocado is a favorite of mine in all forms. I especially enjoy cooking with avocado oil. This guacamole from the California Avocado Growers is a nice twist.

Caribbean Guacamole

Ingredients:

4 ripe, Fresh California Avocados, peeled and seeded.

1 Tbsp. fresh lime juice

1 cup finely diced fresh mango

1 cup finely diced fresh pineapple, well-drained

¼ cup shredded coconut (unsweetened)

1 tsp. crushed red pepper flakes

1 tsp. salt

Method:

  1. Coarsely mash (DO NOT PUREE) Fresh California Avocados.
  2. Fold in remaining ingredients.

Serving Suggestions:

Place guacamole in the center of a platter surrounded by sweet potato or plantain chips.

Beverage Pairings:

Serve with fruity rum cocktails.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.

Guacamole is best made as close to serving as possible. For short-term storage, seal in an airtight container with a piece of plastic wrap directly against the surface of the guacamole and refrigerate.
