Massimo Bottura opened Osteria Francescana in Modena in 1995. An innovator and restaurateur for over twenty years, Bottura has consolidated his reputation as one of the world’s most creative culinary figures. His internationally renowned three Michelin star restaurant, Osteria Francescana, was named number 1 on The World’s 50 Best Restaurants list in 2016 and for the second time in 2018. Bottura’s dishes explore the deep roots of the Italian kitchen while making references to history, art and philosophy. From early on, the restaurant engaged in a profound exploration of territory and tradition, the expression of which can be found in the absolute concentration of flavours guided by Bottura’s definition: “Tradition seen from 10 kilometres away”. Today Osteria Francescana continues to redefine Italy’s rich gastronomic heritage, ingredients and culinary traditions with the benefit of critical distance, contemporary cooking techniques, and a constant desire to insure that the Italian kitchen evolves.
Joan Roca is the chef of the two times acclaimed Best Restaurant of the World by the The World’s 50 Best Restaurants list: El Celler de Can Roca (Girona, Spain). The restaurant also holds 3 Michelin Stars since 2009 and has been on the top positions of the international list for the past 11 years. The collective genius of Joan and his brothers, The Roca Brothers, is well documented. The holy trinity of head chef Joan’s thoughtful but original cooking, pastry chef Jordi’s imagination-defying desserts and sommelier Josep’s beautifully considered wine pairings already adds up to significantly more than the sum of its parts, before you add in a vibrant family dynamic and a deep sense of hospitality. His cuisine is conceptually inspired by traditional mediterranean cuisine and reinterpreted in a modern and creative style in total freedom. While there’s a main emphasis on the quality of the excellence of raw ingredients used, technical innovation and research also play a star role. Cutting edge techniques are applied in order to enhance a brilliant perform of its genuine flavours, to subtly play with the senses evoking memories and emotions in the guest experience. His creative process dialogues and engages both with science and peasants, technology and sensitivity, product and sensorial anthropology in a genuine balance that nourishes the creative game of Joan and his brothers. Italo-Argentinian Mauro Colagreco is Chef Patron of restaurant Mirazur, located in Menton on the Cote D’Azur. Set in a landscape between the mountains and the sea, Mirazur is housed in an impressive, angular, 1950’s building and lies behind the old town of Menton, with views over the Mediterranean sea and the harbour of Garavan. Its south facing position provides the perfect environment for Colagreco to grow a vast vegetable garden, harvest his own avocados from a two hundred year old tree and pick the best and ripest fruit from the citrus orchard. Perhaps Colagreco’s most celebrated characteristic is his ability to seamlessly marry the land and sea. His menu draws comfortably from local seafood found in the Bay of Menton, delicacies from the region and produce from his own private gardens and orchards. Mauro Colagreco’s cuisine defies categorisation.  His dishes embrace the surroundings in a unique and all-encompassing way.  Mauro’s skill lies in his sensitive balance of taste and flavour, allowing each magnificent ingredient its place. With the Italian border just 30m from his front door, Colagreco has the pick of the markets on the Ligurian coast in Italy and the Côte d’Azur in France. In a quest to encourage diners to taste the raw purity of his dishes, Colagreco keeps things simple, expressing his skill through the marriage and combination of superb ingredients.
Christina Tosi is the two-time James Beard Award-winning chef and owner of Milk Bar, a dessert empire and lifestyle brand called “one of the most exciting bakeries in the country” by Bon Appetit Magazine. Known for baking outside of the lines and turning dessert on its head, with signature items including Cereal Milk Soft Serve, Crack Pie and naked layer cakes, Christina founded Milk Bar in 2008, with 14 locations now in New York City, Toronto, Washington DC, Las Vegas, with a Los Angeles location coming soon. Christina has been a judge on Fox’s MasterChef series, and was featured on the debut season of the hit Netflix docu-series, Chef’s Table: Pastry. She is also the author of two cookbooks, Momofuku Milk Bar (2011) and Milk Bar Life (2015), and has a third cookbook, Milk Bar: All About Cake coming out in October 2018.
