I could not let this day go by without one more libation to celebrate St. Patrick’s Day.

This one is simple. Although I am not a lover of creme de minthe, (or green beer) I only added a dash or two, for color and a subtle minty taste.

Irish Martini
Ingredients
2 ounces gin
1 ounce clear vermouth
Dash of green creme de minthe
Method
Fill a mixing glass with ice.
Pour ingredients into glass.
Stir well, but don’t shake.
Strain into a chilled martini glass.
Note: I usually like my martinis at about 5-1. This is a drink I found in the UK, where they made it 1 to 1. This is too sweet for me so I compromised with 2 to 1. However 1 to 1 would work as a dessert drink. As always, make it your way.
The toast, slainte, meaning cheers, is pronounced sloncha, according to Irish historian, Dick O’Dowd. Go Irish!
