While visiting Melbourne last February, Norm and I had the pleasure of spending a night at the Sofitel on Collins. This was an exceptional destination and I only wish we had more time there. However, we did enjoy No. 35, the restaurant on the 35th floor. Executive Chef Stuart McVeigh was nice enough to share his recipe for one of his favorite dishes.
