Champage at the Chesterfield Inn

My first time of having Derby Pie was in Kentucky several decades ago. One word describes it, delicious. I was happy that the Chesterfield Inn shared their recipe.

Chesterfield Inn Kentucky Derby Pie

¾ c      butter, melted and cooled

¾ c      sugar

3/8 c    brown sugar

3/4 c    flour

3 ea      eggs, beaten lightly

4 1/2T bourbon

¾ t       salt

1 1/2t   vanilla extract

 

1 c       semi-sweet chocolate chips

1 c       walnuts, coarse chopped

 

1ea       8″pie shell, unbaked

 

 

Preheat oven to 350F

In mixer, cream together butter and sugars. Add flour, then eggs, bourbon, salt and vanilla.

Spread the chocolate chips and nuts in the bottom of the pie shell.

Pour in the filling

Bake in preheated oven for 30 to 40 minutes, until it set.

Cool

 

Serve w/ bourbon caramel sauce and vanilla ice cream.
