We found an interesting salad to adapt from our memorable trip to the Richmond region of Virginia. Our culinary team loves Virginia.
We recently suggested adding turkey to your favorite salads such as chopped, Caesar and Waldorf.
Here is a new salad with a cranberry dressing to try. The magazine that gave us the idea is called Taste of the South.
Turkey salad southern style:
I head of lettuce, we like Bibb or Boston.
1/2 cup of nuts, pecans or walnuts, although in Virginia they may use peanuts.
12-16 orange or tangerine segments
3-4 cup of shredded turkey from Thanksgiving dinner.
Freshly ground white or black pepper can be added at the end to taste.
Method:
Combine all in a bowl, keep chilled.
Cranberry/raspberry dressing:
3-4 tablespoons cranberry sauce – whole if you like a smooth dressing.
2-3 tablespoons raspberry vinegar
Combine by whisking sauce and vinegar, slowly add oil and whisk again and drizzle over salad.
Best if chilled and remixed before serving.
