About the author: Karina Betlem moved from Bellingham, Washington to Mexico in 2009. She and her husband grew to love Mexico and it’s people during many years of traveling and vacationing there. Seeing the plight of many poor Mexican families, she decided to write her first cookbook, “From the Kitchens of Pancho Villa”, to help support these hard working and caring people. She and her husband are very active at the local animal shelter and often have foster dogs in their home where they live with their own two dogs, Salsa and Tango.
