Pineapple-chicken skewers are a savory yet sweet meal that goes well with rice or a vegetable of your choice.

Grab these ingredients.

  • 1 pineapple
  • 8 boneless skinless chicken thighs
  • Extra virgin olive oil
  • Kosher salt and fresh ground pepper
  • Juice of 1 lemon
  • 2 cloves of garlic
  • 1 cup of ketchup
  • 1/4 cup of honey
  • 1/4 cup of brown sugar
  • 1/4 cup of low-sodium soy sauce
  • 1 tablespoon of yellow mustard

You should also grab 16 wooden skewers to place the pineapple and chicken on. Soak them for 30 minutes in water.

Directions:

Let’s get started.

  1. Place a saucepan on medium heat and add the lemon juice, garlic, ketchup, honey, brown sugar, soy sauce, and mustard. Bring to a simmer and cook for about 10 minutes until thick. Allow it to then cool.
  2. Heat your grill and cut chicken thighs into 2 pieces each. Peel and cut the pineapple into 1 1/2 inch pieces. Place chicken and pineapple pieces on the skewers.
  3. Brush with olive oil and sprinkle on salt and pepper. Remove garlic from the sauce. Set aside 1/2 of the sauce in a separate bowl.
  4. Brush skewers with sauce. Cook for about 10-15 minutes, basting them with the sauce frequently.

When done, remove from the grill and use leftover sauce for dipping!

Classic Burger

There’s nothing like a good classic hamburger. You can cook a hamburger in a few different ways, but cooking on Kamado grills is a favorite choice.

Grab these ingredients.

  • 1 lb ground sirloin
  • Kosher salt and fresh ground black pepper
  • 3 slices of cheese (your choice of type)

You’ll then want to grab all of the toppings as well such as ketchup, mustard, hamburger buns, onions, lettuce, tomatoes, and more.

Let’s get started.

  1. Create 3 patties of the same size. Seasons all sides with salt and pepper. Flatten the patties, as they’ll expand while cooking.
  2. Place grill on high heat. Grill until crispy and no longer pink. Cook for about 6 minutes on each side for a medium burger.
  3. Place cheese on top about 2 minutes before done cooking. Remove from the grill and place them on the buns. Add all your favorite toppings.

A good amount of salt and pepper is all your burger needs for seasoning. The key is to remember to flatten them before cooking. Smashing the burgers while cooking will release all of the juices from inside the burger.

Fish Tacos

There’s something refreshing about fish tacos. The thought of chowing down on a fish taco during a hot summer day is enough to make your mouth water.

  • 1 1/2 lb of cod
  • 8 corn tortillas
  • 3 tablespoons of extra virgin olive oil
  • 1/2 tablespoon of vegetable oil
  • 2 teaspoons of chili powder
  • 1/2 teaspoon of ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon of cayenne pepper
  • Kosher salt and fresh ground black pepper
  • Juice of 1 lime
  • Lime wedges
  • 1 diced avocado
  • Sour cream

Corn Slaw

  • Juice of 1 lime
  • 1 tablespoon of honey
  • 1/4 cup of mayonnaise
  • 2 tablespoons chopped cilantro
  • 2 cups of shredded purple cabbage
  • 1 minced jalapeño
  • 1 cup of corn kernels

The corn slaw is optional but completes the taco in our opinion!

Directions

Let’s get started.

  1. In a bowl, whisk the lime juice, olive oil, chili powder, cayenne, and paprika. Place cod in a bowl and toss until coated. Marinate for 15 minutes.
  2. Make slaw in a bowl by whisking together the lime juice, mayonnaise, cilantro, and the honey. When done, stir in the corn, cabbage, and the jalapeño. Sprinkle in salt and pepper
  3. Over medium-high heat, place the vegetable oil in a large non-stick skillet and heat. Season the cod with salt and pepper and place the cod in the skillet, skin side down. Cook for about 3-5 minutes on each side or until done.
  4. When done cooking, allow the cod to rest for about 5 minutes. Flake the cod with a fork to serve on the tacos.
  5. Grill the tortillas and place cod inside. Add the corn slaw on top. Place sliced avocado on top of the corn slaw.

To top it all off, you can then take a lime wedge and squeeze lime juice over the top of the tacos. Garnish them with sour cream and cilantro, if desired.
