First, I picked a wide variety of wines. We had Briar Rose Cabernet Sauvignon from Temecula, CA; Umbria Sangiovese La Carala from Italy; Calamity Jane from Prairie Berry Winery in South Dakota; and Chateau St Michelle Riesling.

The Castello Classic with its slight taste of mountain herbs was a favorite with the Briar Rose Cab and the Sangiovese.

The Castello Hirten paired well with the Briar Rose Sauvignon. It brought out the slight hint of carmel and pine.

The Castello Weissbier with its creamy texture matched up with the Chateau St Michelle Riesling as well as the fruity Prairie Berry Calamity Jane. Calamity Jane is as light as a riesling.

Our pairing was quite simple. We’ve been on a crazy travel schedule, so I’ve not had the time to devote to this wonderful cheese.

I have used it the Weissbier over zucchini patties; the Hirten shredded over pasta, as it is similar to a Parmesan; and the Classic where I wanted a sharper flavor.
