Brenda and I both enjoy guacamole. In going to Fresh Start Health Retreat Center, I previously mentioned that I was checking out their recipes.

Only once before I have taken part in a regim that was as disciplined as this. I was happy with the results. As the time is drawing closer (November 4th), I’m eagerly anticipating what I’m going to experience. Having experienced a heavy September and October of traveling (Switzerland; Stowe, VT; Portland, ME; Jacksonville, FL; and Miami, FL), I’m looking forward to 5 nights in one place.

Their recipe for guacamole is good, I tried it. So, I may be in for more good treats than I was thinking. I’ll keep you up to date.

Traditional Guacamole (serves 7)

Special Equipment: food processor

Preparation Time: 20 min

Ingredients:

2 large tomatoes, diced

½  onion, diced

4 T fresh parsley, chopped

4 large very ripe avocadoes, peeled and pitted

1 t  unrefined sea salt

2  lemons, juiced

Pinch  nutritional yeast (optional)

Method

Chop tomato, onion and parsley and set aside. Blend rest of ingredients in food processor until smooth. Add the chopped onions and tomatoes, mix well. Decorate with parsley.

Enjoy! It’s difficult for me to stop with one serving of guacamole, but I will.
